Venison is available almost ail year round, Fallow deer is a larger animal than roe deer and both yield, finer subtler meat than the red deer found
in Scotland. Roe is particularly prized by gastronomes. For a treat, roast a prime joint like rolled saddle; rub it with the oil seasoning, garlic/herbs if you like and roast it quickly in the same way and for the same time as you would a piece of sirloin. Allow it to stand before you carve it; this gives you time to make a good gravy with the residue in the roasting pan. Serve with redcurrant or rowan jelly.
