In season October to January, pheasant is the most familiar and easily available game bird; the average bird will feed 3 people. It has more flavour than chicken but is not too strong. Tradionally roasted it makes a fine sunday dinner, or try any of your regular chicken recipes using pheasant. Instead of coq au vin why not try pheasant au vin, or make your favourite chicken pie using local pheasant for a change? Pheasant breasts are perfect for a quick and delicious supper; try marinading them in oil, lemon juice, pepper and herbs overnight before cooking them. |
