In season September to January, partridge prefer to live in the open countryand farmland than the woods. They love the downland habitat with its mixture of grassland and arable fields and Sussex is renowned for its fine partridges. Gastronomically partridge is possibly the most delicate and delectable game bird; it has a subtle, "ungamey" flavour and is delicious simply roasted and served with the tradional English accompaniments of fried breadcrumbs, game chips and a little thin gravy. For serving allow one bird per person.
